Banana Nut Bread Smoothie Ingredients 1 Cup Light Vanilla Soy Milk 2 Teaspoons Vanilla Extract 1 Cup Ice 1 Small Banana 1/4 Cup Walnuts Directions In a blender, add milk, walnuts, and ice. Mexican Sweet Potato

So easy and delicious! You can use ground beef or ground turkey with taco seasoning. I make a homemade taco seasoning. Both the Gimme Some Oven and Rachel Cooks recipes I have used in past recipes are great. This would also be a great vegetarian recipe if you substituted the meat with a crumbled black bean burger. Make ahead of time, reheat, and top with desired toppings for easy lunches or dinners. Ingredients Yam or Sweet Potato Shredded Sharp Cheddar Ground Beef or Turkey or Black Bean Burger (crumbled) Taco Seasoning Sour Cream Salsa directions Prepare ground beef or turkey with taco seasoning. (I made my taco seasoning and prepared the ground beef beforehand and then just warmed it up.) Preheat oven to 350 degrees. Use a fork to poke holes on all sides of sweet potato. Chicken Salad Recipe

I really like my mom’s chicken salad with grapes and ranch seasoning. But, I didn’t have any grapes so I went to Recipe Puppy, typed in the ingredients I had on hand and a chicken salad recipe that used honey mustard came up. I was a little scared at first, so I made a small batch. I added apple pieces and made my own honey mustard sauce. I think this chicken salad is great with crackers or would make a great sandwich (add a piece of romaine lettuce and a few slices of tomato). It is a quick and easy lunch that isn’t too terribly unhealthy. Here is my take on the recipe. INGREDIENTS 1 can (12.5 ounces) Organic Canned Chicken 1 medium Fuji Apple 1/2 cup walnut and pecan pieces 1 teaspoon pepper 1/2 cup mayonnaise 3-4 tablespoons (rounded) yellow mustard 2-3 tablespoons honey DIRections Drain chicken and shred using two forks. Creamy Smoothie Recipe

I took this recipe from Epicurious and made a couple of changes. This smoothie had more of a milkshake consistency and was pretty good. I have been taking ripe bananas, breaking them into chunks and freezing them so that I don’t have to use ice cubes. Ingredients 1 1/2 frozen banana chunks 8 ounces light vanilla soy milk 2 tablespoons brown sugar 1 teaspoon pure vanilla extract 1/2 teaspoon ground nutmeg Directions 1. Place all ingredients in blender and blend until desired consistency. For a thicker consistency, add ice cubes.
