My New Favorite Pie Crust

For Easter this year, I took sweet tea and pecan pies to a friend’s home full of Minnesota born folks. For the record, people in the upper mid-west love sugar too. I have been using a crust recipe that I love but the last time I made it, I somehow ended up with less dough. I decided to make two pies just in case (you always need a backup pie) so I searched for a pie recipe that yielded enough dough for two crusts. Ina Garten’s Perfect Pie Crust Recipe made the best crusts! They stayed together, tasted great, and I believe I have found my new favorite crust recipe. I made a few alternations. If you are not using Pyrex or glass pie plates you can disregard Direction #6 and you only need 9 tablespoons or 1 1/4 sticks of butter. Yogi Vanilla Spice Perfect Energy I received a bag a of Yogi Vanilla Spice Perfect Energy from my friend Carolyn during one of our “tea swaps.” The company describes this tea as a perfect energy boost. This is a blend of Green Tea and Assam Black Tea, as well as  Ayurvedic herbs Organic Gotu Kola Leaf and Ashwagandha, flavored with vanilla bean and spices. My review: Pretty tasty, smells nice, and is a nice coffee alternative. 7 out of 10. Republic of Tea Blackberry Sage I received a sample of the Republic of Tea Blackberry Sage in their catalogue. This tea is a blend of black tea, fruit, and herbs. Finest quality tea leaves mingle with sweet, fragrant blackberries and cool, soothing white sage. Pumpkin Cake Muffins

Recently, I was browsing Pinterest and came across a recipe claiming two ingredients could make delicious, healthy muffins. After making a gunky mess, it was confirmed that in this case, it was in fact untrue. I ended up with a batter so thick there was no way I was going to get muffins as promised so I added some ingredients and ended up with these pumpkin-cake-textured muffins that are pretty good, especially with a cup of coffee. Ingredients 1 Box Spice Cake Mix 15 Ounce Can of Pure Pumpkin 2 Eggs 3 Splenda Packets 1 Tablespoon Nutmeg 1/2 Tablespoon Cinnamon 1/2 Cup Water Directions Preheat oven to 375 degrees. Spray a muffin pan cups with non-stick spray or line with muffin tins. In a large bowl, whisk two eggs. Add spice cake mix, pure pumpkin, and beat mixture with a hand mixer. Add three Splenda packets, nutmeg, cinnamon, water, and beat until smooth. Scoop spoonfuls of mixture into muffin pan cups ( I ended up with 18 muffins).
