Torchy’s Tacos has a chorizo queso recipe. After searching the internet, I found a lot of different copycat recipes. Here’s my take. It is much better than driving four hours to the nearest Torchy’s.

INGREDIENTS
- Ground Chorizo
- Rotel Mild Diced Tomatoes Original Diced Tomatoes And Green Chilies (2- 10 ounce cans)
- Velveeta Cheese (16 ounces)
- 1/4 cup Milk
- Cholula Hot Sauce Original
- Avocado
- Cilantro
INSTRUCTIONS
- Turn on slow cooker and set heat to high.
- Brown and break ground chorizo apart in a pan over medium heat.
- Add both cans of Rotel to slow cooker (do not drain).
- Cut up Velveeta Cheese in tiny cubes and add to slow cooker.
- Add 1/4 cup of milk to slow cooker and stir.
- Stir occasionally until cheese has melted.
- Turn slow cooker to low heat.
- Once chorizo is fully cooked, drain grease and add to slow cooker.
- Stir, cover with lid for at least ten minutes.
- Top with a drizzle of hot sauce, cilantro, and avocado.

The chorizo gives it a great flavor and it’s pretty close to the Hillbilly Queso at Torchy’s.
