Snickerdoodle Cookies Recipe

Snickerdoodles.

Ingredients

  • 2 1/2 cups all-purpose flour
  • tsp baking powder
  • 1/2 tsp salt
  • cup butter, softened (I used 12 tbsp of a vegan buttery spread instead of 16 tbsp of regular butter)
  • 2 eggs
  • 1 3/4 cups white sugar, divided
  • tsp cinnamon

Directions

  1. Preheat oven to 350° F
  2. Sift together flour, baking powder, and salt. Then set aside
  3. In a small bowl, combine 1/4 cup sugar and cinnamon together
  4. Using a silicone spatula, mix the butter and 1 1/2 cups sugar together until pale yellow
  5. Mix eggs into butter and sugar until well combined
  6. Add flour mixture (1/2 cup at a time) to the mix of eggs, butter, and sugar, until dough forms
  7. Shape dough into 1 3/4 inch balls and roll the balls in the cinnamon sugar.
  8. Place balls on an ungreased baking sheet about 3 inches apart
  9. Bake 10-12 minutes (I took mine out when they appeared golden but still a little mushy in the center. Then I allowed them to sit on the pan till they deflated and cooled a bit)
  10. Allow cookies to cool a bit and then using a slotted spatula, move cookies to drying rack to fully cool
