Thanksgiving

Cooking for Thanksgiving went really well thanks to my helper (Matt). It would have been very tough to cook everything alone. I really needed about three ovens. The timeline I made really helped me stay on track because the night before I planned out every movement based on prep and cook time so I was always working on a dish or washing and cleaning up so after we finished eating there was very little kitchen cleanup to do. I bought a cheap apron from Target and I am glad I did because it was useful especially when making the biscuits (I had flour every where and all over me) which I was most worried about. I had to do a little improvising, I didn’t have a biscuit cutter so I used the lid of a mason jar which worked just fine and they turned out great. Everything tasted really good except the green beans. I know not to use that recipe again. The potatoes, dressing (needed more poultry seasoning), turkey (a little overcooked but still moist), cranberry sauce, macaroni and cheese, and biscuits …

Thanksgiving Step 3

I completed step 3 last by going through my recipe list and determining total prep time and cooking time for each dish in order to figure out what I needed to start with and end with. If you are making a whole turkey, do you really want to get up a 4:00 a.m. to put it in the oven so you can make sure you eat by noon? If so, good for you. We are different kinds of people. It is easier when there isn’t a huge group of people coming to your house to eat because then you could say, “We are …

Thanksgiving Steps 4-7

I made some changes to my Thanksgiving menu. I chose to use my other mother’s (Pam) macaroni and cheese recipe which included eggs and milk and I decided instead of using one kind of cheese I would use three (parmesan, fontina, medium cheddar). I actually did some of these steps out of order. I did step 4 about a month ago after step 1 and 2. I did steps 5-7 before step 3 . For step 5 I printed out my detailed recipe list I typed up and made a shopping list. So Monday I went grocery shopping for Thanksgiving, step 6. I bought all my ingredients including my turkey breast. My mom suggested that I cook the turkey and mix the dressing tonight (Wednesday). Currently, my turkey is in the oven resting in a pan of water and finely chopped celery and onion. Once the turkey is done I will use the broth left in the pan in my dressing mixture (my mom’s tip and recipe) of cornbread, white bread, and poultry seasoning. I went …
