Chicken Salad

Chicken salad recipes can be pretty simple but I have seen many with lots of unexpected ingredients. My mom’s chicken salad recipe is really good. It is easy to make and tastes great. I made a batch to make sandwiches (romaine lettuce, sliced Campari tomato on sourdough bread from the bakery) and I got some pre-sliced cantaloupe to eat on the side. I use the same canned chicken from Sam’s Club that I use for the taco soup. The only problem with this recipe is that it calls for grapes and I am the worst grape picker in the world. I will always pick the unripe or too ripe bag of grapes. However, once I mixed them in, they tasted fine.

Ingredients for Chicken Salad

  • 1 can of chicken breast (drained)
  • 1/2 cup pecans (broken into small pieces)
  • 1 cup green grapes (cut into halves)
  • 1/2 to 1 cup mayonnaise
  • 1 packet ranch seasoning


  1. Drain chicken, break into pieces with a fork. In a bowl mix pecan pieces, chicken, grape halves, ranch seasoning, and mayonnaise. If mixture is too dry add more mayonnaise.

This recipe yields 5 cups and according to my calculations, it is about 169 calories per half cup. I will be using a low fat mayo next time to cut some calories.
